Easy and delicious keto Swedish meatballs for a cozy weeknight meal without the IKEA trip.
Ingredients:
  • 500g beef mince
  • 4 green shallots, thinly sliced
  • 62.50 ml finely chopped fresh continental parsley
  • 1 tsp allspice
  • 0.63 gm ground nutmeg
  • 36.40 gm extra virgin olive oil
  • 80ml (1/3 cup) Beef Style Liquid Stock
  • 11.80 gm Dijon mustard
  • 180ml (3/4 cup) pouring cream
  • 600g steamed cauliflower, coarsely chopped
  • 150g fresh green beans, steamed
  • Fresh continental parsley leaves, coarsely chopped, to serve
Instructions:
  • In a spacious bowl, mix together the beef, egg, shallot, parsley, garlic, allspice, and nutmeg until well combined. Don't forget to season generously. Shape the mixture into tablespoon-sized balls.
  • In a spacious non-stick frying pan, heat up the oil over medium-high heat. Sear the meatballs, turning frequently, for 6-8 minutes until they turn golden and are perfectly cooked. Then, transfer them to a plate.
  • Pour in the stock, mustard, and 125ml (1/2 cup) cream into the pan and bring it to a boil. Let it simmer on low heat for 5 minutes until it reduces by half. Then, add the meatballs back to the pan and simmer for 1-2 minutes until they are heated through.
  • Blend the cauliflower and the leftover cream in a food processor until velvety. Season to taste.
  • Spoon the cauliflower mash onto plates and top with beans, meatballs, and sauce. Sprinkle with seasoning and parsley before serving.
