Massage cabbage for Chef John's delicious sweet-hot coleslaw with few ingredients - tender, crunchy perfection.
Ingredients:
  • 1 tablespoon kosher salt
  • 1 pound cabbage
  • 0.25 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon coarse-grain mustard
  • 1 tablespoon honey, or more to taste
  • 0.5 teaspoon cayenne pepper, or to taste
  • 1 tablespoon apple cider vinegar
Instructions:
  • Prepare the cabbage by halving and quartering, removing the core, and slicing into 1/2-inch ribbons. Place the cabbage in a bowl, sprinkle with salt, and massage until softened, approximately 1 minute. Allow it to rest for 10 minutes, tossing occasionally. Rinse the cabbage well under cold water in a colander, then let it drain thoroughly.
  • Combine creamy mayonnaise, tangy Dijon mustard, flavorful grain mustard, sweet honey, a hint of cayenne pepper, and a splash of vinegar in a spacious bowl.
  • Thoroughly squeeze dry the cabbage and mix it with the dressing until well combined. Cover with plastic wrap and refrigerate for at least 1 hour. Give it a good toss and taste before serving.
