Baked chicken breasts coated in tangy sweet hot mustard - a simple, flavorful weeknight favorite.
Ingredients:
  • 5 tablespoons extra-virgin olive oil
  • 4 (8 ounce) skinless, boneless chicken breast halves
  • 10 tablespoons sweet hot mustard, divided
  • 1 teaspoon garlic and herb seasoning, or more to taste
  • ground black pepper to taste
  • 1 cup chopped onion
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • In a bowl, generously coat each chicken breast with olive oil. Transfer the chicken to a 9x13-inch oven-safe glass baking dish. Add 2 tablespoons of sweet hot mustard to the dish with the remaining olive oil.
  • Spread the sweet hot mustard generously on one side of each chicken breast; season with garlic and herb seasoning and pepper. Place them in the baking dish, mustard-side down. Repeat the seasoning on the bare sides of the chicken. Scatter onion and garlic around the chicken pieces, placing any extra pieces on top.
  • Roast in the oven until the chicken is cooked through and the juices run clear, approximately 30 minutes. Check for doneness with a thermometer (internal temperature of at least 165°F/74°C). Rest covered with foil for 10 minutes before serving.
