Sweet almond omelettes

Ingredients:
  • 150ml Shape milk (Dairy Farmers brand)
  • 2 eggs
  • 45.00 gm Equal Spoonful sweetener
  • 1/4 tsp almond essence
  • 30g (1/3 cup) almond meal
  • 50.00 ml plain flour
  • 12 rambutans, peeled, deseeded, quartered
  • 1 ripe mango, cheeks removed, peeled, cut lengthways into 2cm-thick slices
  • 4.60 gm vegetable oil
  • 80ml (1/3 cup) low-fat vanilla custard
  • Ground cinnamon, to dust
Instructions:
  • Combine milk, eggs, sugar substitute, and almond essence in a bowl, whisking until smooth.
  • Sprinkle almond meal and flour over mixture and whisk until smooth batter forms. Combine rambutans and mango.
  • In a 22cm non-stick frying pan, heat half of the oil over medium heat. Cook half of the egg mixture for 3-4 minutes until almost set and slightly runny on top. Transfer to a plate. Repeat with the rest of the oil and egg mixture.
  • Cut the omelettes in half and elegantly arrange each piece on a plate. Add a colorful assortment of fresh fruit on top. Gently fold the omelette to enclose the delicious filling. Drizzle a generous amount of custard over the omelette and finish off with a sprinkle of fragrant cinnamon.
