Tangy chicken stir-fry with pineapple, brown sugar, veggies, and sweet-savory sauce in one pan.
Ingredients:
  • 1 (20 ounce) can pineapple chunks, juice reserved
  • 0.25 cup soy sauce
  • 0.5 cup vinegar
  • 0.75 cup brown sugar
  • 0.25 cup all-purpose flour
  • 1.5 green bell peppers, diced
  • 1 (8 ounce) can water chestnuts, drained and sliced
  • 1.5 pounds cooked chicken meat, cut into strips
Instructions:
  • In a large saucepan over medium-low heat, combine the reserved pineapple juice, soy sauce, vinegar, and brown sugar, then whisk in flour until thickened.
  • Add bell peppers, celery, and water chestnuts to the saucepan, then incorporate the chicken. Cook while stirring until heated through. Finish by adding the pineapple chunks before serving.
