Whip up a speedy and delicious stir-fry for the little ones!
Ingredients:
  • 57.50 gm rice bran oil
  • 500g chicken tenderloins, cut into 3cm pieces
  • 1 medium red onion, halved, cut into thin wedges
  • 1/2 bunch baby (Dutch) carrots, peeled, trimmed, halved lengthways
  • 1/2 small pineapple, peeled, chopped
  • 125g cherry tomatoes, halved
  • 250g jar sweet and sour stir-fry sauce
  • 250.00 ml beansprouts, trimmed
  • Steamed jasmine rice, to serve
Instructions:
  • Preheat a wok over high heat, then add 1 tablespoon of oil. Swirl the oil to coat the wok, then add half of the chicken. Stir-fry for 3 minutes until cooked through, then transfer to a plate. Repeat the process with another tablespoon of oil and the remaining chicken.
  • Heat the remaining oil in a wok, then sauté the onion until just softened. Toss in the carrot and pineapple, stir-fry briefly. Add the chicken back to the wok along with tomato and sauce. Cook until heated through. Finish by mixing in the beansprouts. Serve with rice.
