Sweet and Sour Chicken

Colorful sweet & sour chicken with veggies and pineapple, ready in 30 minutes!
Ingredients:
  • 1 box Chicken Helper™ sweet & sour chicken
  • 2 cups water for rice
  • 1 lb boneless skinless chicken breasts
  • 1 small onion, cut into thin wedges
  • 1/2 large green bell pepper, cut into 3/4-inch pieces
  • 1/2 large red bell pepper, cut into 3/4-inch pieces
  • 1 1/4 cups hot water for sauce
  • 1 can (20 oz) pineapple chunks, drained
Instructions:
  • In a 2-quart saucepan, combine rice from the Chicken Helper box and 2 cups of water. Bring to a gentle boil, then lower the heat, cover, and let it simmer undisturbed for around 20 minutes until the rice is tender and the liquid is absorbed.
  • Cut the chicken into 1-inch pieces and pat dry if needed. Place the chicken in a bowl and toss with the seasoned coating from the Chicken Helper box until evenly coated.
  • Heat 1 tablespoon of oil in a nonstick skillet over medium-high heat. Sauté onion and bell peppers for 3 minutes, stirring frequently. Remove from skillet. In the same skillet, heat the remaining 2 tablespoons of oil. Cook chicken for about 6 minutes until deep golden brown all over, stirring occasionally.
  • Gently add 1 1/4 cups of hot water to the skillet with chicken and mix in the sauce from the Chicken Helper box. Add the vegetables back to the skillet. Bring to a boil, then simmer uncovered for 3 to 5 minutes, stirring occasionally, until the sauce thickens and the chicken is cooked through. Mix in the pineapple and heat everything until hot. Serve over rice.
