Tender boneless chicken thighs marinated and baked in sweet and sour flavors for a crowd-pleasing main course.
Ingredients:
  • 0.5 cup pineapple juice, or more to taste
  • 0.33333334326744 cup barbeque sauce (such as Sweet Baby Ray's®)
  • 0.25 cup brown sugar, or more to taste
  • 0.25 cup reduced-sodium soy sauce
  • 1.5 teaspoons grated fresh ginger
  • 1 clove garlic, minced
  • 3 pounds boneless, skinless chicken thighs
Instructions:
  • Preheat the oven to 375°F (190°C).
  • Combine pineapple juice, barbeque sauce, brown sugar, soy sauce, ginger, and garlic in a small bowl. Set aside 1/2 cup for basting. Place the chicken thighs in a resealable plastic bag and pour in the remaining marinade. Seal the bag and refrigerate for 8 hours or overnight, making sure to flip the bag halfway through if you can.
  • Discard the marinade and drain the chicken.
  • Roast uncovered in a preheated oven for 25 minutes, basting often with the reserved marinade. Flip, then roast and baste until fully cooked, approximately 15 minutes. Check for doneness by ensuring that the juices run clear and an instant-read thermometer reads 165 degrees F (74 degrees C) in the center.
