Sweet and Sour Orange Chicken

Golden fried chicken coated in tangy sweet orange sauce for a crispy twist on Asian flavors.
Ingredients:
  • 1 cup ice water
  • 1 egg
  • 0.25 teaspoon baking soda
  • 2 cups all-purpose flour, divided
  • 4 skinless, boneless chicken breasts, cut into cubes
  • vegetable oil for frying
  • 4 tablespoons cornstarch
  • 3 tablespoons water
  • 0.5 cup ketchup
  • 0.5 cup white vinegar
  • 0.5 cup water
  • 0.5 cup orange marmalade
  • 0.5 cup chopped fresh pineapple
  • 2 tablespoons pineapple juice
  • 2 teaspoons soy sauce
  • 1.5 teaspoons minced fresh ginger root
  • 1 teaspoon minced garlic
  • 0.25 teaspoon red pepper flakes
Instructions:
  • In a bowl, whisk or fork together ice water and egg until combined. Mix in baking soda and salt. Add 1 cup of flour and stir until just blended with lumps remaining.
  • In a separate bowl, put the remaining 1 cup of flour. Coat each piece of chicken in flour, followed by dipping into the egg mixture and allowing excess batter to drip off.
  • Heat vegetable oil in a wok or large frying pan over medium heat until it crackles when a drop of water is added.
  • Fry the chicken in hot oil until golden brown and fully cooked, about 3 to 4 minutes, flipping as needed. Set aside and keep warm.
  • Mix cornstarch with 3 tablespoons of water in a small bowl.
  • In a medium saucepan, mix together sugar, ketchup, vinegar, 1/2 cup water, orange marmalade, pineapple, pineapple juice, soy sauce, ginger, garlic, and red pepper flakes. Bring to a boil. Stir in cornstarch mixture, then simmer over low heat, stirring occasionally, until thickened to your liking.
  • Drizzle the luscious sauce over the succulent chicken before elegantly presenting it for a delightful meal.
