Sweet and Spicy Asian Pork Tenderloin in the Instant Pot®

Asian-inspired Instant Pot® pork tenderloin with sweet and spicy drizzle. Easy to make and bursting with flavor!
Ingredients:
  • 2 teaspoons smoked paprika
  • 1 teaspoon kosher salt
  • 0.25 teaspoon white pepper
  • 2 (1 pound) pork tenderloins, silver skins removed
  • 1.75 cups chicken broth
  • 3 tablespoons soy sauce
  • 1 tablespoon avocado oil
  • 0.5 cup no-sugar-added apricot preserves
  • 2 teaspoons sambal oelek, or to taste
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame seeds
Instructions:
  • Preheat an 8-quart multi-functional pressure cooker (such as Instant Pot®) by selecting the Saute function.
  • In a small bowl, mix together paprika, salt, ground ginger, and white pepper. Rub the mixture onto all sides of the tenderloins.
  • In a separate bowl, mix 2 cups of chicken broth with soy sauce and rice vinegar. Adjust the liquid amount based on your pot's size recommendations in the owner's manual.
  • Drizzle avocado oil into the Instant Pot® and heat until glistening. Sear tenderloins for about 2 minutes on each side until browned. Transfer the tenderloins to a plate. Pour in the liquid mixture, deglaze the pot by scraping the browned bits on the bottom, and mix well. Turn off the Saute function.
  • Place a rack or trivet in the Instant Pot® and set tenderloins on top. Seal the lid, set the vent to Sealing, and select high pressure as per manufacturer's instructions. Set the timer for 1 minute and let the pressure build for 10 to 15 minutes.
  • Cook pork until it reaches an internal temperature of 135 to 140 degrees F. Rest tenderloins on a cutting board, covered with foil, to allow the internal temperature to rise to 145 degrees F. Reserve about 3 tablespoons of cooking liquid for later use.
  • 1. Choose the "Saute" function and bring the remaining cooking liquid in the pot to a boil. Let it reduce to about 1 cup, which takes 3 to 10 minutes, depending on the pot size. Stir in preserves, sambal oelek, grated ginger, garlic, and sesame oil; cook for approximately 2 minutes.
  • In a small bowl, combine 3 tablespoons of the reserved cooking liquid with cornstarch to make a slurry. Stir the slurry into the mixture in the pan on Saute function until it boils and thickens slightly. Carefully transfer the glaze into a container.
  • Prepare the pork by slicing it. Drizzle the slices with the glaze, sprinkle with sesame seeds, and garnish with cilantro. Serve warm and offer additional glaze for dipping, if preferred.
