Delicious sweet and spicy stir-fry, ideal for a quick midweek meal. Pair with fluffy rice for a satisfying family dinner.
Ingredients:
  • 300g sticky pork ribs (see related recipe)
  • 18.20 gm peanut oil
  • 115g fresh baby corn, halved lengthways
  • 1 large red capsicum, sliced
  • 1 medium yellow capsicum, sliced
  • 1 bunch broccolini, trimmed, chopped
  • 6cm piece fresh ginger, peeled, finely grated
  • 57.20 gm honey
  • 31.50 gm soy sauce
  • Steamed jasmine rice, to serve
Instructions:
  • Debone the pork and slice into 5mm-thick pieces.
  • In a hot wok, swirl oil to coat. Add corn, capsicum, and broccolini. Stir-fry for 6 minutes until broccolini is tender. Add ginger and stir-fry for 1 minute until fragrant. Include pork, honey, soy sauce, and 1 tablespoon of water. Stir-fry for 2 minutes until heated through. Serve with rice.
