Sweet Apricot BBQ Shrimp Kabobs

BBQ shrimp and turkey bacon kabobs with apricot glaze - a tangy twist for a Middle Eastern feast!
Ingredients:
  • 1/3 cup hickory-smoked barbecue sauce
  • 1/3 cup apricot preserves
  • 1/4 teaspoon crushed red pepper
  • 4 slices turkey bacon, each cut lengthwise into 6 strips
  • 1 can (8 ounces) whole water chestnuts, drained
  • 1 pound uncooked peeled deveined large shrimp, thawed if frozen
  • 2 cups hot cooked couscous, pasta or rice
Instructions:
  • Submerge four 10-inch bamboo skewers in water for a minimum of 30 minutes to avoid charring.
  • Preheat oven to broil. Combine barbecue sauce, preserves, and red pepper in a small bowl; set the mixture aside.
  • Wrap a strip of bacon around each water chestnut, then thread shrimp and water chestnuts alternately onto bamboo skewers, ensuring there is space between each piece. Arrange skewers on a rack in a broiler pan.
  • Place the kabobs about 4 inches from the heat source and broil for 6 minutes, brushing them frequently with the sauce mixture. Flip the kabobs, brush with more sauce, and broil for an additional 5 to 6 minutes until the shrimp are pink and firm. Serve the kabobs with couscous, and enjoy!
