Apricot-Glazed Pork

Sweet apricot preserves enhance vibrant stir-fry.
Ingredients:
  • 1 pound pork tenderloin
  • 1 tablespoon chili or vegetable oil
  • 1 bag (1 pound) frozen broccoli, carrots and cauliflower
  • 3 tablespoons apricot preserves
  • 1 tablespoon oyster sauce or hoisin sauce
  • Hot cooked rice or noodles, if desired
Instructions:
  • Trim excess fat from the pork and slice into 1/2-inch pieces.
  • Preheat wok or 12-inch skillet over high heat and add oil, swirling to coat the sides. Stir-fry pork for 4 to 5 minutes until no longer pink, then add frozen vegetables and stir-fry for an additional 2 minutes.
  • Mix in the preserves and oyster sauce, stirring continuously for about 30 seconds until everything is warm. Serve the mixture over rice.
