Sweet apricot biscuits

Apricot cookies bursting with sweetness, ideal for gifting.
Ingredients:
  • 250g butter
  • 90.00 gm brown sugar
  • 395g can sweetened condensed milk
  • 500.00 ml plain flour, sifted
  • 75.00 gm wholemeal self-raising flour, sifted
  • 150g diced dried apricots
Instructions:
  • Preheat your oven to 170°C and prepare 2 large baking trays by lining them with baking paper.
  • With an electric mixer, whip up the butter and sugar until creamy. Mix in the condensed milk until smooth, then add the egg and beat until combined.
  • Pour the mixture into a spacious bowl, then mix in the flours and apricots. Stir until just combined. Shape heaped tablespoons of the mixture into 25 balls. Put them on prepared trays, with 3cm space in between for spreading. Gently flatten the balls with your fingertips. Bake the biscuits in batches for 20 minutes, or until they turn a pale golden color. Take them out of the oven and let them cool on the trays.
