Delightful candied citrus peels: a chic treat, perfect solo or dipped in chocolate, ideal for enhancing desserts.
Ingredients:
  • 6 lemon peels, cut into 1/4 inch strips
  • 4 orange peels, cut into 1/4 inch strips
  • 2 cups white sugar
  • 1 cup water
  • 0.33333334326744 cup white sugar for decoration
Instructions:
  • In a large saucepan, combine lemon and orange peel with water and bring to a boil over high heat. Boil for 20 minutes, then drain and set aside.
  • In a saucepan over medium heat, mix 2 cups of sugar with 1 cup of water. Boil until reaching 230 degrees F (108 degrees C) or until a small amount dropped in cold water forms a soft thread. Add peel, simmer on low for 5 minutes, stirring often, then drain.
  • Roll the pieces of peel, a few at a time, in the remaining sugar until coated. Allow them to dry on a wire rack for several hours, then store in an airtight container.
