Ingredients:
  • 1kg potatoes, peeled, chopped
  • 60ml thickened cream
  • 80ml milk
  • Salt & freshly ground pepper
  • 270g jar Thai-style sweet chilli stir-fry sauce
  • 4 firm white fish fillets (like ling or perch)
  • 175g green beans, halved lengthways
Instructions:
  • Submerge the potatoes in a generous saucepan of cold water. Boil until tender, about 15-20 minutes. Drain and mash with cream and milk. Season with salt and pepper to taste.
  • Pour the 1/3 cup (80ml) of stir-fry sauce into a large frying pan over medium heat. Place the fish in the pan and cook for 2-3 minutes on each side until it flakes easily with a fork. Keep warm.
  • Cook the beans until they are vibrant green and tender. Gently heat the rest of the stir-fry sauce in a saucepan over low heat.
  • Spoon the mashed potatoes onto serving plates. Arrange beans, fish, and warm stir-fry sauce on top. Serve promptly.
