Sweet chilli sauce

Whip up a delicious homemade Thai sauce in no time.
Ingredients:
  • 500g long fresh red chillies, stems trimmed
  • 3 garlic cloves, peeled
  • 750ml (3 cups) white vinegar
  • 645g (3 cups) caster sugar
Instructions:
  • Prepare the 100g of chillies by removing the stems and halving them, then place them in the food processor bowl. Proceed by destemming, halving, and deseeding the remaining 400g of chillies. Coarsely chop them and add to the food processor along with garlic and 250ml white vinegar. Blend everything together until finely chopped.
  • In a large saucepan over low heat, combine the chili mixture with the remaining vinegar and caster sugar. Stir and cook for 5 minutes until the sugar is dissolved.
  • Turn up the heat to high until boiling. Lower the heat to medium and simmer, stirring occasionally, until the sauce thickens (35-40 minutes). Then, carefully pour the sauce into sterilized airtight bottles and seal them.
