Indulge in sweet corn and basil frozen pops with creamy Yoplait® yogurt - a refreshing Mexican treat for your loved ones.
Ingredients:
  • 2 ears fresh sweet corn, husks removed, cleaned
  • 1 cup half-and-half
  • 1/2 cup sugar
  • 1 cup Yoplait® Original plain yogurt
  • 1/4 cup chopped fresh basil leaves
  • 8 ice pop molds or paper cups (3-oz size) and craft sticks (flat wooden sticks with round ends)
Instructions:
  • Prepare 1 cup of fresh corn from the cobs, then cut the cobs in half. Combine the corn kernels, cobs, half-and-half, and sugar in a 4-quart saucepan. Bring to a boil over medium-high heat. Cover the saucepan, then allow it to sit off the heat for 1 hour.
  • After enjoying the kernels, blend the corn mixture until velvety smooth. Strain into a bowl and delicately fold in yogurt and fresh basil for a burst of flavor.
  • Fill ice pop molds with the mixture until they are all evenly filled. If using paper cups, pour the mixture into the cups and cover with foil. Make a small slit in the center of the foil with a knife and insert a craft stick through the hole. Freeze for 8 hours or until firm. To enjoy, remove the pops from the molds or peel off the paper cups before serving.
