Delicious summer corn salad with sweet corn, juicy tomatoes, and onions, dressed in a basil vinaigrette.
Ingredients:
  • 6 ears corn, husked and cleaned
  • 3 large tomatoes, diced
  • 1 large onion, diced
  • 0.25 cup chopped fresh basil
  • 0.25 cup olive oil
  • 2 tablespoons white vinegar
Instructions:
  • - Boil a generous amount of salted water in a large pot. - Cook corn in the boiling water for 7 to 10 minutes, until it reaches your preferred level of tenderness. - Drain, cool slightly, then cut kernels off the cob using a sharp knife.
  • Combine the corn, tomatoes, onion, basil, oil, vinegar, salt, and pepper in a large bowl and refrigerate until ready to serve.
