Deliciously easy corn salad, ideal for summer nights or picnics.
Ingredients:
  • 4 ears fresh corn, shucked
  • 0.5 cup finely diced red onion
  • 2.5 tablespoons red wine vinegar
  • 2.5 tablespoons olive oil
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 5 tablespoons thinly sliced fresh basil leaves
Instructions:
  • 1. Boil a generously salted pot of water. Add corn and cook until just tender, about 3 minutes. Drain and shock in ice water to retain color and stop cooking. Let cool for approximately 10 minutes.
  • Carefully cut kernels from the cobs, getting as close as possible.
  • Combine the corn kernels, red onion, vinegar, olive oil, salt, and pepper in a large bowl. Add the fresh basil right before serving. Adjust seasonings to taste. Serve chilled or at room temperature.
