Skinny Marinated Pork with Summer Corn Salad

Reduce fat and sodium by 71% and 42% respectively with this zesty lime juice and honey marinade for pork and salad dressing combo.
Ingredients:
  • 1 pound boneless pork loin, trimmed of fat
  • 1/3 cup lime juice
  • 2 tablespoons honey
  • 1 fresh jalapeño chile pepper, seeded and finely chopped
  • 1/4 cup snipped fresh cilantro
  • 1 box (9 oz) frozen corn
  • 2 cups coarsely chopped fresh arugula or spinach
  • 1 medium red sweet pepper, seeded and chopped
Instructions:
  • Cut the pork into 1 1/2-inch cubes and place them in a large resealable plastic bag set in a shallow dish. Mix lime juice and honey in a small bowl. Add chile pepper, cilantro, and salt to the mixture. Pour 1/4 cup of the lime juice mixture into the bag with the pork cubes, saving the rest for later. Seal the bag and coat the pork cubes by turning it. Refrigerate the marinated pork for 1 hour, turning the bag occasionally.
  • Pat dry the pork cubes. Skewer the pork onto 8-inch skewers, making sure to leave 1/4-inch spaces between cubes. Grill over medium coals for 18 to 20 minutes, flipping to ensure even browning. (Or grill on a preheated gas grill over medium heat, following the same cooking time.)
  • Follow package instructions to prepare the corn; allow it to cool a bit. In a medium bowl, mix the corn, arugula, and sweet pepper. Add the lime juice mixture; mix well. Serve the pork alongside the corn salad.
  • Soak wooden skewers in water for 30 minutes before using.
