Delicious sweet and tangy lamb chops served with creamy coleslaw and grilled corn.
Ingredients:
  • 36.40 gm olive oil, divided
  • 80ml maple syrup
  • 1 orange, zested and juiced
  • 40.00 ml finely chopped rosemary
  • 8 Lamb Forequarter chops
  • 4 corn cobs, husks and silks removed
  • 20g parmesan
  • 250g coleslaw mix
  • 2 spring onions, thinly sliced
  • 75g mayonnaise
  • Salt & pepper, to season
Instructions:
  • In a large snap lock bag or shallow glass bowl, mix together 1 tablespoon of oil, maple syrup, orange juice, orange zest, and rosemary. Season with salt and pepper. Add the lamb chops and ensure they are thoroughly coated. Let marinate for 30 minutes.
  • Preheat a barbeque or char-grill pan to medium heat. Lightly brush corn with 1 tablespoon of oil. Grill, turning occasionally, for about 12 minutes until tender and slightly charred. Transfer to a serving dish, sprinkle with parmesan, and season with salt and pepper.
  • Preheat the grill to medium-high heat. Grill the chops for 3 to 4 minutes per side until cooked to your preferred doneness, turning regularly. Transfer the chops to a plate, loosely cover with foil, and let them rest for 5 minutes before serving.
  • In a medium bowl, mix coleslaw mix, spring onion, and mayonnaise. Season to taste. Serve alongside chops and corn.
