Pakistan-inspired lamb chops with sweet-savory caramelized onion gravy, perfect with naan or rice.
Ingredients:
  • 0.25 cup oil
  • 2 pounds lamb chops
  • 3 pods green cardamom
  • 1 pod black cardamom
  • 2 bay leaves
  • 1 cinnamon stick
  • 1 teaspoon cumin seeds
  • 6 large onions, thinly sliced
  • 1 tablespoon minced fresh ginger root
  • 2 teaspoons red chile powder
  • 0.5 teaspoon ground turmeric
  • salt to taste
  • 0.25 cup water
  • 2 tomatoes, chopped
  • 3 green chile peppers, halved and seeded
  • 1 tablespoon chopped fresh cilantro, or to taste
Instructions:
  • In a large skillet over medium heat, heat oil until shimmering. Sear lamb chops on all sides until golden brown, approximately 5 minutes. Transfer lamb chops to a plate and set aside.
  • Infuse the fragrant spices - green cardamom, black cardamom, bay leaves, cinnamon stick, and cumin seeds - for about 1 minute. Sauté onions, garlic, and ginger until onions are golden brown, around 10 minutes. Incorporate chile powder, turmeric, and salt; stir-fry for 1 more minute. Then, introduce the browned lamb, water, tomatoes, and chile peppers. Let it simmer over low heat until the lamb is tender, the liquid has evaporated, and onions have created a thick gravy, about 40 minutes. Serve adorned with fresh cilantro.
