Creamy sweet onion rice dish with melted Swiss cheese. Perfect side for any meal.
Ingredients:
  • 0.75 cup uncooked basmati rice
  • 5 cups water
  • 3 pounds sweet onions, coarsely chopped
  • 1 cup half-and-half cream
  • 1.5 teaspoons salt
  • 2 cups shredded Swiss cheese, divided
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 2-quart baking dish with butter.
  • Bring a large saucepan of water to a lively boil. Add rice and stir gently. Lower the heat, cover, and let the rice simmer for about 5 minutes, until half-cooked. Drain the rice and set aside.
  • In a large skillet over medium heat, gently sauté onions in melted butter until translucent, for about 8 minutes. Combine onions and butter with rice in the skillet, then add half-and-half, salt, and 1 3/4 cups of Swiss cheese. Transfer the mixture to a baking dish and sprinkle the remaining 1/4 cup of Swiss cheese on top.
  • Cook the uncovered dish in the preheated oven until the rice is tender and the top is lightly browned, approximately 1 hour.
