Sweet and savory slow-cooked pork, perfect for tacos or burritos. Serve with rice and beans.
Ingredients:
  • 3 pounds pork shoulder roast
  • 2 cups salsa
  • 1 (12 fluid ounce) can or bottle cola-flavored carbonated beverage
  • 2 cups brown sugar
  • 0.5 (1.27 ounce) packet fajita seasoning
  • 2 tablespoons taco seasoning mix
  • 1 (7 ounce) can chopped green chile peppers
Instructions:
  • Place the pork roast in a slow cooker and generously pour in 4 cups of water. Let it cook on High for 5 hours until perfectly tender.
  • Take out the pork from the slow cooker, discard the liquid, and then cut the pork into 4 pieces. Keep the pieces aside.
  • Blend salsa until smooth. Mix the puréed salsa with cola, brown sugar, fajita seasoning, taco seasoning, and green chiles in the slow cooker. Add pork back to the slow cooker and cook on High for 3 hours.
  • Shred the pork using 2 forks.
