Sweet potato and mixed seed damper

Deliciously nutty oven-baked damper, perfect for any occasion or as a savory surprise for guests!
Ingredients:
  • 82.50 ml pepita and sunflower seed mix
  • 6.00 gm sesame seeds
  • 1 tsp poppy seeds
  • 300.00 gm self-raising flour, plus extra for dusting
  • 62.50 ml LSA (see notes)
  • 1.20 gm salt
  • 60g chilled butter, chopped
  • 250.00 ml mashed orange sweet potato, cooled (see notes)
  • 193.13 gm milk, plus extra for brushing
  • 150g softened butter, extra, to serve
Instructions:
  • Preheat the oven to 220C/200C fan-forced and lightly sprinkle flour on a baking tray.
  • Mix seed mix, sesame seeds, and poppy seeds in a bowl.
  • In a large bowl, mix together flour, LSA, and salt. Use your fingertips to blend the butter into the flour until it resembles fine crumbs. Stir in 2 tablespoons of seed mixture. Create a well in the mixture and add sweet potato and milk. Use a butter knife to stir until a soft, sticky dough forms.
  • Transfer dough onto a lightly floured surface, knead gently until smooth, then shape into an 18cm round before placing it on the prepared tray.
  • Brush the top with a touch more milk, then sprinkle with the rest of the seed mixture. Season with salt and pepper. Score the top of the damper into 8 wedges using a sharp knife. Bake for 30 minutes or until golden and hollow when tapped. Let it stand for 5 minutes on the tray. Serve warm with softened butter.
