Crispy sweet potato and zucchini fritters, perfect for a quick family meal prep.
Ingredients:
  • 350g gold sweet potato, peeled, 
coarsely grated
  • 200g zucchini, coarsely grated
  • 2 spring onions, thinly sliced
  • 120g tasty cheese
  • 3 Free Range Eggs, lightly whisked
  • 60g buckwheat flour
  • 45.50 gm olive oil
  • 350g mixed tomatoes, halved or quartered
  • 60g Baby Spinach & Rocket
  • 80g spinach
  • 210g yoghurt
Instructions:
  • In a large bowl, mix together sweet potato, zucchini, spring onion, cheddar, and egg. Stir in the flour until fully combined. Season to taste.
  • Heat the oil in a large frying pan until shimmering. Spoon 1/4-cup portions of the sweet potato mixture into the pan, cooking each side for 3 minutes until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm. Repeat with the remaining mixture in two more batches.
  • In a medium bowl, mix together the tomato, spinach, and rocket. Drizzle with the remaining oil and season.
  • Mix spinach dip with yogurt in a small bowl. Place the fritters on a serving platter, season them, and serve with the salad and yogurt mixture.
