Sweet Potato Boats with Bacon, Apples, and Cheddar

Delicious sweet potato boats filled with crispy bacon, sweet apples, and gooey Cheddar cheese, perfect as a flavorful side dish for any meal.
Ingredients:
  • 2 sweet potatoes, with no blemishes on the skin
  • 2 teaspoons olive oil
  • 4 slices bacon
  • 1/2 onion, diced
  • 1/2 Granny Smith apple, cored, and diced
  • 2 scallions, sliced, white and green parts divided
  • salt and freshly ground black pepper to taste
  • 1/2 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C), then elegantly drape a sheet pan with parchment or foil.
  • Prepare sweet potatoes by scrubbing them clean and patting them dry. Use a fork to poke several holes in the potatoes, then massage the skin with olive oil before placing them on the pan.
  • Bake in the preheated oven for around 30 minutes until just starting to soften.
  • Let the sweet potatoes cool a bit. Then, slice them lengthwise using a clean towel to protect your hand.
  • Use a serving spoon to gently scoop out the sweet potato flesh, leaving a 1/4-inch layer inside the skin. Cut the partially cooked sweet potato into 1/2-inch cubes and place the skins back on the sheet pan, cut side down. Bake the skins until they are crispy, for an additional 5 to 10 minutes.
  • Fry bacon in a large non-stick skillet over medium heat until golden and crisp, about 3-4 minutes per side. Crumble the bacon and set aside.
  • Add the onion to the skillet with the rendered bacon fat and sauté for about 3 minutes. Incorporate the apples, sweet potato cubes, and white parts of the scallions. Cook while stirring occasionally until the apples are soft and sweet potatoes are fully tender, approximately 8 to 10 minutes.
  • Toss bacon crumbles into the skillet, then season with salt and pepper to your liking.
  • Evenly distribute the mixture among the four sweet potato “boats” and generously sprinkle shredded Cheddar on top. Bake until the cheese is melted, approximately 5 minutes.
  • Once finished baking, garnish with the saved scallion greens and enjoy while still warm.
