Blonde brownies with sweet potato and a decadent buttery glaze.
Ingredients:
  • 2 cups grated sweet potato
  • 1 cup chopped pecans
  • 4 eggs
  • 1 cup confectioners' sugar
  • 2 tablespoons melted butter
  • 1 teaspoon milk, or as needed
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease a 10x13-inch baking dish.
  • In a bowl, use an electric mixer to combine white sugar and 1 cup of softened butter until creamy. Add sweet potato, flour, pecans, eggs, vanilla extract, and salt, stirring well after each addition until smooth. Pour the batter into the baking dish.
  • Bake until a toothpick comes out clean, 30 to 40 minutes in the preheated oven.
  • In a bowl, whisk together confectioners' sugar and 2 tablespoons of melted butter until smooth. Gradually add milk until a thin glaze forms. Pour the glaze over the hot brownies, then allow them to cool before slicing.
