4-Ingredient Sweet Potato Cheesecake Casserole: Simple fall dessert perfection.
Ingredients:
  • 1 22-ounce container prepared mashed sweet potatoes with cinnamon and brown sugar (or about 2 cups of leftover mashed sweet potato casserole), such as Bob Evans®
  • 1 24.3 ounce container prepared cheesecake filling, such as Philadelphia®
  • 1 graham cracker pie crust
  • 2 cups mini marshmallows
  • 3 Tbsp. finely chopped pecans
Instructions:
  • In a medium bowl, combine mashed sweet potatoes with cheesecake filling until smooth. Pour the mixture into the pie crust and generously top with marshmallows. Freeze the pie for at least 2 hours.
  • Preheat the broil setting in the oven. Place the pie in the center of the oven and broil for 1 minute until the marshmallows are evenly browned. Allow it to stand for 5 minutes before serving, or refrigerate until ready. Optionally, top with pecans before serving.
