Sweet potato casserole with a sweet twist.
Ingredients:
  • 3 cups cooked and mashed sweet potatoes
  • 1 cup white sugar
  • 0.5 cup butter
  • 0.33329999446869 cup evaporated milk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 0.33329999446869 cup butter, melted
  • 1 cup chopped pecans
  • 1 cup packed light brown sugar
  • 0.5 cup all-purpose flour
Instructions:
  • Combine sweet potatoes, white sugar, butter (or margarine), milk, eggs, and vanilla until smooth. Transfer mixture into a greased 9 x 13 inch baking dish.
  • Combine 1/3 cup melted butter or margarine with pecans, brown sugar, and flour, then dollop on top of the sweet potato mixture.
  • Simply bake at 350 degrees F (175 degrees C) for 25-30 minutes until golden brown.
