Sweet Potato Donuts

Transform leftover sweet potatoes into flavorful sweet potato donuts, fried to perfection with spices and applesauce.
Ingredients:
  • 1 quart oil for frying, or as needed
  • 3 tablespoons all-purpose flour
  • 0.5 cup brown sugar
  • 1 tablespoon baking powder
  • 1 dash ground nutmeg
  • 2 tablespoons unsalted butter, melted
  • 0.25 cup mashed sweet potatoes
  • 0.25 cup milk
  • 0.25 cup applesauce
  • 1 large egg
  • 1 teaspoon vanilla extract
Instructions:
  • Preheat oil in a deep-fryer or large saucepan to 350°F (175°C).
  • In a big bowl, mix together 2 cups plus 3 tablespoons of flour, brown sugar, baking powder, salt, cinnamon, and nutmeg. Add melted butter and stir until crumbly.
  • In a medium bowl, blend together sweet potatoes, milk, applesauce, egg, and vanilla extract until fully combined.
  • Combine the wet ingredients with the dry ingredients, kneading thoroughly.
  • Transfer the dough onto a generously floured surface and roll it out to 1/4-inch thickness. Use a donut cutter to create your desired shapes.
  • Gently submerge the doughnuts into the hot oil and fry in batches until golden brown, about 2 minutes per side.
