Nutrient-rich energy bites with sweet potato, oats, almond meal, hemp seeds, and almond butter.
Ingredients:
  • 1 cup cooked and mashed sweet potato
  • 0.5 cup rolled oats
  • 0.5 cup almond meal
  • 0.25 cup hemp seeds
  • 0.25 cup almond butter
  • 1 tablespoon honey, or more to taste
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.125 teaspoon sea salt
Instructions:
  • Combine mashed sweet potato, oats, almond meal, hemp seeds, almond butter, honey, cinnamon, vanilla, and sea salt in a bowl, mixing until thoroughly combined.
  • Chill the mixture for 15 minutes, then shape it into 20 1-inch balls. Return the energy balls to the fridge for another 15 minutes to set and chill. Keep them stored in a covered container in the refrigerator for 3 to 5 days.
