Sweet potato falafel bites

Spiced sweet potato falafel - perfect as a snack or meal with salad and warm pita!
Ingredients:
  • 750g sweet potato, cut into large chunks
  • 1.25 gm mixed spice
  • 1 garlic clove, chopped
  • 82.50 ml chopped fresh coriander, plus extra to serve
  • 62.50 ml plain flour
  • 12.00 gm sesame seeds
  • Vegetable oil, for shallow-frying
  • 250.00 ml plain Greek-style yoghurt
  • 21.00 gm lemon juice
  • 2.50 gm sweet paprika
  • 18.20 gm extra virgin olive oil
Instructions:
  • Microwave the sweet potato in a microwave-safe bowl on HIGH for 8 to 10 minutes or until tender. Let it cool for 20 minutes, then peel.
  • In a large bowl, gently mash the sweet potato. Add cumin, ground coriander, mixed spice, garlic, fresh coriander, flour, salt, and pepper. Mix well and refrigerate for 15 minutes. Shape the mixture into 3cm balls and sprinkle with sesame seeds.
  • Heat a generous amount of vegetable oil in a large frying pan until it reaches 2cm up the side of the pan. Cook the falafel in batches on medium-high heat for about 5 minutes, turning them until they become golden all over. Place the cooked falafel on a paper towel to drain.
  • In a small bowl, mix together yogurt, lemon juice, paprika, and mint. Season with salt and pepper, then drizzle with olive oil.
  • Sprinkle additional fresh coriander on top of the falafel and accompany with a side of tangy yogurt dip.
