Transform sweet potato leftovers into flavorful holiday cookies spiced with cinnamon, allspice, and lemon zest - a simple and kid-approved recipe.
Ingredients:
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 0.75 cup butter
  • 0.25 cup white sugar
  • 0.25 cup honey
  • 1 tablespoon lemon zest
  • 1 cup mashed cooked sweet potato
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Combine flour, baking powder, cinnamon, baking soda, nutmeg, allspice, ginger, and salt by sifting into a bowl.
  • Cream together butter, white sugar, and brown sugar until smooth. Add honey, egg, and lemon zest and mix well. Gently fold in sweet potato, then stir in flour mixture until just combined.
  • Form tablespoon-sized portions of dough into round balls and arrange them 2 inches apart on baking sheets without greasing them.
  • Bake in the preheated oven until edges start to brown, approximately 8 minutes. Allow to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely for about 10 minutes.
