Crispy sweet potato and goat cheese dumplings fried in bacon butter by Chef John.
Ingredients:
  • 1 large sweet potato
  • 0.25 cup goat cheese
  • cayenne pepper to taste
  • 1 teaspoon kosher salt, or to taste
  • 0.5 cup self-rising flour
  • 2 tablespoons butter, or to taste
  • 4 slices bacon, diced
Instructions:
  • Place the sweet potato on a microwave-safe plate. Pierce it all over with a fork and microwave until fully tender, about 8 to 10 minutes. Allow it to cool slightly.
  • Cut the sweet potato in half and scoop the flesh into a bowl. Mash it thoroughly while it's still warm. Add the egg, goat cheese, black pepper, cayenne pepper, and salt. Whisk until everything is well combined. Add the flour and mix with a spatula until there are no dry spots left. Cover the dough with plastic wrap and refrigerate for at least 1 hour.
  • In a saucepan over medium heat, melt the butter until sizzling. Then, add the bacon and cook while stirring occasionally until it's just starting to crisp, which usually takes about 3 to 5 minutes.
  • In a sizzling pan, fry 5 dumplings at once in golden butter until beautifully crisp on each side, approximately 3 minutes per side. Continue with the rest of the dumplings. Serve the golden dumplings on a plate and generously crown each portion with savory bacon butter.
