Sweet potato pizza balls

Cheesy salami-stuffed sweet potato balls with pizza sauce - a delicious and simple snack!
Ingredients:
  • 500g sweet potato, peeled, cut into 3cm pieces
  • 35g sliced salami, finely chopped
  • 25g (1/3 cup) finely grated cheddar
  • 40.00 ml pizza sauce
  • 50g (1/3 cup) plain flour
  • 2 eggs, lightly whisked
  • 50g (1 cup) panko breadcrumbs
  • Vegetable oil, to shallow-fry
  • Basil pesto, to serve (optional)
Instructions:
  • Steam the sweet potato in a steamer basket over simmering water or microwave in a covered bowl on High for 10-12 minutes until tender. Drain if needed and transfer to a heatproof bowl. Let it cool slightly.
  • Mash the sweet potato with a potato masher until smooth, then mix in the salami, cheddar, and pizza sauce until well combined. Roll the mixture into tablespoon-sized balls and place them on a baking paper-lined tray.
  • Set up a breading station with three shallow bowls - one with flour, one with beaten egg, and one with breadcrumbs. Coat the balls in flour, then egg, and finally breadcrumbs before placing them back on the tray.
  • Pour enough oil into a large frying pan to reach a 1cm depth. Heat over medium-high heat. Shallow-fry the balls in batches, turning frequently, for 5 minutes or until crispy and golden. Drain on a paper towel-lined plate. Serve with optional pesto.
