Delicious sweet and creamy potato salad featuring a mix of white and sweet potatoes, tangy mayonnaise, zesty mustard, crunchy celery, and flavorful hard-boiled eggs.
Ingredients:
  • 2 potatoes
  • 1 sweet potato
  • 0.5 onion, chopped
  • 0.75 cup mayonnaise
  • 1 tablespoon prepared mustard
  • 1.5 teaspoons ground black pepper
Instructions:
  • Boil a big pot of salted water until it's bubbling. Add white potatoes and sweet potatoes; cook until a knife slides in easily, around 30 minutes. Drain, cool, and peel the potatoes. Chop them into bite-sized pieces.
  • In a saucepan, gently submerge eggs in cold water, then bring to a boil. Turn off heat, cover, and allow eggs to fully cook in the hot water for 10 to 12 minutes. Next, cool the eggs, peel them, and chop into bite-sized pieces.
  • In a spacious bowl, mix together potatoes, eggs, celery, and onion.
  • In a small bowl, combine mayonnaise, mustard, pepper, and salt until smooth. Mix into the potato mixture until evenly coated. Chill before serving.
