Sweet potato salad

Trendy sweet potato salad: low GI, fewer calories, lots of flavor.
Ingredients:
  • 1.5kg (about 2 large) sweet potatoes, peeled, cut into large pieces
  • 3 rindless bacon rashers, coarsely chopped
  • 80ml (1/3 cup) buttermilk
  • 19.80 gm mayonnaise
  • 5.90 gm Dijon mustard
  • 1/2 small garlic clove, crushed
  • 82.50 ml fresh continental parsley leaves
  • 2 shallots, trimmed, thinly sliced
Instructions:
  • Boil sweet potato in salted water until tender, about 12 minutes. Drain and cool on a tray in a single layer. Cut into 2cm pieces and place in a serving bowl. Set aside.
  • Sauté bacon in a non-stick pan over medium heat, stirring occasionally, until golden and crispy. Drain on paper towels and set aside.
  • In a jug, blend together buttermilk, mayonnaise, mustard, and garlic. Drizzle the mixture over the sweet potato. Add three-quarters of the parsley, bacon, and shallot. Mix everything together. Before serving, top the salad with the remaining bacon, shallot, and parsley for an extra burst of flavor.
