Sweet Potato Praline Cake

Enhance Betty Crocker™ yellow cake mix with sweet potatoes and pecans for a flavorful dessert perfect for any celebration.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • 3/4 cup milk
  • 1/2 cup vegetable oil
  • 3 eggs
  • 1 1/2 cups mashed cooked sweet potatoes
  • 1 cup chopped pecans
  • 3/4 cup butter, softened
  • 3 cups powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 1 cup coarsely chopped praline pecans
Instructions:
  • Preheat your oven to 350°F and generously spray the bottom of a 13x9-inch pan with cooking spray.
  • In a large bowl, combine cake mix, 3/4 cup milk, oil, eggs, and sweet potatoes. Mix with an electric mixer on low speed for 30 seconds, then increase to medium speed and beat for 2 minutes. Fold in 1 cup of chopped pecans. Transfer batter to a pan and bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow to cool completely in the pan on a cooling rack for about 1 hour.
  • In a medium bowl, use an electric mixer to beat creamy butter on medium speed. Gradually incorporate powdered sugar until light and fluffy. Mix in 1 tablespoon of milk and vanilla. Frost the cake and top with praline pecans.
