Sweet Potato Soup with Coconut Milk

Creamy sweet potato soup with leeks and coconut milk - simple and delicious.
Ingredients:
  • 4 pounds sweet potatoes, peeled and cubed
  • 1 tablespoon salted butter
  • 0.25 cup chopped leeks
  • 2 (14 ounce) cans coconut milk
  • 1 cup chicken stock
  • 1 pinch ground black pepper
  • 1 pinch cayenne pepper
Instructions:
  • In a pan over medium-high heat, melt butter until sizzling. Saute leeks until translucent, about 5-7 minutes. Add sweet potatoes and saute for another 3-5 minutes. Pour in coconut milk, then add chicken stock, black pepper, and cayenne. Simmer until sweet potatoes are tender, stirring occasionally, for about 30 minutes.
  • Puree soup with an immersion blender and serve.
