Vibrant Thai sweet potato soup with ginger, curry, Sriracha, and coconut milk.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 cup diced onion
  • 2 tablespoons red curry paste
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon grated fresh garlic
  • 4 cups peeled and diced sweet potatoes
  • 2 cups peeled and diced carrots
  • kosher salt and freshly ground black pepper to taste
  • 3 cups vegetable broth
  • 1 cup coconut milk
Instructions:
  • In a large pot over medium-high heat, saute onion in oil until soft and translucent, about 3 to 4 minutes. Add curry paste, Sriracha sauce, ginger, and garlic; saute until fragrant, about 3 to 4 minutes. Add sweet potatoes and carrots, then season with kosher salt and pepper.
  • Pour in the flavorful vegetable broth and bring it to a lively boil. Lower the heat gently and let it simmer until the vegetables are tender enough to be pierced with a fork, approximately 20 to 25 minutes. Turn off the heat and use an immersion blender to puree the soup until velvety smooth. Lastly, add in the creamy coconut milk and season to perfection, if needed.
