Whip up a cozy Thai sweet potato soup for a comforting dinner.
Ingredients:
  • 9.20 gm canola oil
  • 1 small brown onion, chopped
  • 21.00 gm red curry paste
  • 750g gold sweet potato, peeled, coarsely chopped
  • 2 tsp lemongrass paste
  • 2.40 gm salt
  • 4.00 gm brown sugar
  • 500ml soy milk
  • 125ml coconut milk
  • 12.00 gm sesame seeds, toasted
  • Coriander sprigs, to serve
Instructions:
  • In a large saucepan over medium heat, warm the oil. Add the onion and cook, stirring occasionally, for 5 minutes until softened. Stir in the curry paste and cook for 1 minute until fragrant.
  • Place the sweet potato and lemongrass in a pot with 1 1/2 cups (375ml) of water. Bring to a boil, then simmer covered on low heat for 15 minutes until the sweet potato is tender.
  • Combine the salt, sugar, soy milk, and coconut milk. Allow it to cool slightly. Blend the soup in batches until smooth.
  • Transfer the soup back to the saucepan and gently heat it up over low heat until warm (but don't let it boil). Serve the soup in individual bowls, garnish with sesame seeds and coriander, and don't forget to season to taste.
