Thai sweet potato and lentil soup

Try our comforting Thai sweet potato and lentil soup for a quick and affordable family dinner!
Ingredients:
  • Canola oil cooking spray
  • 1 medium brown onion, finely chopped
  • 3cm piece fresh ginger, peeled, finely grated
  • 28.00 gm Thai red curry paste
  • 750g orange sweet potato, peeled, diced
  • 187.50 ml red lentils, rinsed
  • 765.00 gm vegetable liquid stock
  • 21.00 gm lime juice
  • 24.40 gm fish sauce
  • 8.00 gm brown sugar
Instructions:
  • In a large, heavy-based saucepan, lightly coat with oil and heat over medium-low heat. Add onion and cook, stirring occasionally, for 5 minutes until softened. Stir in ginger and curry paste, and cook for an additional 1 minute until fragrant.
  • Combine sweet potato, lentils, stock, and 2 cups of cold water in a pot. Bring to a boil, then lower heat and simmer partially covered for 15 to 20 minutes until the sweet potato and lentils are soft. Let it sit for 5 minutes to cool before blending until smooth.
  • Return the mixture to the pan over low heat, then add lime juice, fish sauce, and sugar. Cook while stirring for 5 minutes or until heated through. Serve with a sprinkle of fresh coriander on top.
