Sweet potato soup

Cozy up with a comforting sweet potato soup for winter.
Ingredients:
  • 18.20 gm olive oil
  • 1 large brown onion, chopped
  • 800g sweet potato, peeled, chopped
  • 500g sebago potatoes, peeled, chopped
  • 1/2 tsp dried chilli flakes
  • 1 litre chicken style liquid stock
  • 83.33 gm pure cream
Instructions:
  • In a large saucepan over medium-high heat, heat oil and sauté onion and garlic until softened, about 3 minutes. Incorporate sweet potato and sprinkle in chili flakes, sauté for another minute until fragrant.
  • Pour in the flavorful stock, sprinkle with freshly ground pepper, cover the pot, and bring to a boil. Lower the heat to medium-low and simmer gently for 15 to 20 minutes, or until the potato is tender. Let it sit for 5 minutes to cool slightly before serving.
  • In batches, puree until smooth. Return to pan on low heat and stir in fresh cream. Cook for 2 minutes until warmed. Serve hot.
