Quick and delicious vegetarian dishes with just six ingredients!
Ingredients:
  • 1 small brown onion, diced
  • 1kg orange sweet potato, peeled, roughly chopped
  • 2 medium carrots, peeled, roughly chopped
  • 1275.00 gm vegetable liquid stock
  • 250.00 ml fresh basil leaves
Instructions:
  • In a large saucepan over medium-high heat, sauté onion in oil until softened, about 3 minutes.
  • Combine sweet potato, carrot, and stock in a pot. Season generously with pepper and cover. Bring it to a boil, then lower the heat to medium-low and simmer for 20 to 25 minutes until the carrot is tender. Remove from heat and let it cool for 5 minutes before serving.
  • Add fragrant basil leaves to the mixture. Blend until velvety smooth in batches. Return the luscious soup to a pot over gentle heat. If desired consistency is thicker than preferred, gently incorporate a touch of water. Stir lovingly for 2 minutes or until the delightful aroma fills the kitchen. Serve joyfully.
