Sweet Potato-Pear Soup

Cozy up with quick, delicious sweet potato and pear soup for dinner. Ready in under an hour!
Ingredients:
  • 2 teaspoons canola oil
  • 1 small onion, chopped (1/4 cup)
  • 1 medium stalk celery, chopped (1/2 cup)
  • 1/2 cup apple juice
  • 1/2 teaspoon dried thyme leaves
  • 1/2 teaspoon paprika
  • 3 medium dark-orange sweet potatoes (about 1 1/2 lb), peeled, diced (4 1/2 cups)
  • 1 medium pear, peeled, diced (1 cup)
  • 2 cans (14 oz each) reduced-sodium chicken broth
  • Chopped fresh thyme, if desired
Instructions:
  • Heat a generous amount of oil in a 3-quart saucepan over medium heat. Sauté onion and celery in the fragrant oil for 4 to 5 minutes, stirring occasionally, until they soften and become tender.
  • Combine all remaining ingredients, excluding fresh thyme. Bring to a boil, then reduce heat, cover, and simmer for 15 to 20 minutes, or until the sweet potato is tender.
  • Blend half of the soup in a blender until smooth. Transfer back to the saucepan. Blend the remaining soup until smooth. Heat the blended soup until hot. Garnish with fresh thyme before serving.
