Ingredients:
  • 225g plain flour
  • 150g cold butter, chopped
  • 1-40.00 gm water
  • 375.00 ml cooked pumpkin, mashed
  • 250ml evaporated milk
  • 110g brown sugar
  • 3 eggs, lightly beaten
  • 54.00 gm maple syrup
  • 2.50 gm cinnamon
  • 1.25 gm ground ginger
  • 1/2 tsp cloves
  • 1.25 gm ground nutmeg
Instructions:
  • First, preheat your oven to 180°C. Then, generously grease 6 fluted flan tins that are 10cm each. Next, pulse the flour and butter in a food processor until crumbly. Add 1-2 tablespoons of water and process until the pastry just comes together.
  • Transfer the dough to a lightly floured surface and knead gently until it becomes smooth. Divide the dough into 6 equal portions. Roll out each portion and use it to line each pie dish, trimming the edges as needed. Place non-stick baking paper over the dough and fill it with dried beans or rice. Bake in the oven for 10 minutes. After 10 minutes, remove the baking beans and paper, then bake for an additional 5 minutes. Allow the crust to cool before using.
  • Combine the mashed pumpkin, milk, sugar, eggs, maple syrup, and spices until well blended. Transfer the mixture into pastry cases and bake for 25-30 minutes until firm. Allow to cool before serving with cream.
