Flaky, buttery whole wheat pie crust perfect for sweet or savory pies like pumpkin, apple, or pot pies.
Ingredients:
  • 0.5 cup rolled oats
  • 0.75 cup whole wheat flour
  • 2 teaspoons white sugar
  • 0.33333334326744 cup cold butter, cut into pieces
  • 2 tablespoons very cold water, or more if needed
Instructions:
  • Add oats to the food processor and pulse until finely ground.
  • Combine ground oats with flour, sugar, and salt in a medium bowl. Use a pastry blender or two knives to cut in the butter until mixture is crumbly. Drizzle 2 tablespoons of water and mix with a fork until the mixture holds together, adding up to 1 more tablespoon of water if needed.
  • Gently shape dough into a ball and place it on a lightly floured sheet of waxed paper. Cover with another sheet of waxed paper and roll into a 1/8-inch thick circle to fit a 9-inch deep-dish pie plate. The wax paper will prevent the delicate dough from breaking.
  • Peel off top waxed paper, flip dough into pie plate, gently remove bottom paper, trim any extra crust, tuck edges, and create decorative crimps.
  • The crust is prepared and ready to be filled. Refer to any notes if a pre-baked crust is needed for your recipe.
