Sweet Refrigerator Pickles

Quick and easy sweet pickles ready in 24 hours, lasting two weeks in the fridge.
Ingredients:
  • 2 small cucumbers, thinly sliced
  • 1.5 tablespoons salt
  • 1 medium onion, finely chopped
  • 1 cup white sugar
  • 1 cup white wine vinegar
  • 0.5 cup apple cider vinegar
  • 0.25 cup brown sugar
  • 1.5 teaspoons mustard seeds
  • 0.5 teaspoon celery seeds
  • 1 pinch ground turmeric
Instructions:
  • Combine refreshing cucumber slices with a sprinkle of salt in a bowl, allowing the flavors to meld for 1 1/2 hours.
  • Place cucumbers in a sieve in the sink and rinse them well under cold running water until fully drained.
  • In a saucepan over medium heat, merge white sugar, white wine vinegar, apple cider vinegar, brown sugar, mustard seeds, celery seeds, and turmeric. Let it come to a boil, then stir and cook until the sugar dissolves, approximately 3 minutes.
  • In a heat-proof bowl, combine drained cucumbers and onion. Pour the hot vinegar mixture over them. Allow to sit at room temperature for 1 hour.
  • Place the cucumbers and liquid in a container with a secure lid. Chill in the refrigerator for 24 hours before enjoying.
